Sri Lanka Leaves (Curry Leaves / Karapincha)

Sri Lankan curry leaves – also known as karapincha – originate from Sri Lanka and are an indispensable ingredient in South Asian cuisine. The dark green, aromatic leaves have an intense, warm, slightly lemony-nutty fragrance.

They are used fresh in curries, dals, stir-fries, sambals, chutneys, soups, and infused oils. Roasting them in oil brings out their full aroma and gives dishes an authentic Sri Lankan flavor.
