Lemongrass is an aromatic, lemony-fresh herb used primarily in Thai, Vietnamese, and Indian cuisine. Its long, firm stalks release an intense, citrusy fragrance and lend a unique, fresh note to dishes such as soups, curries, stir-fries, marinades, and teas.

The lower, more tender parts of the stalk are usually finely chopped or crushed and used. Whole stalks are often used for flavoring and are removed before serving.
