The mixture is finely balanced with curry leaves, mustard seeds, and ginger. Simply stir the mix with water (and optionally a little yogurt) until smooth. After a 5-minute resting period, fry thinly in a hot pan. Ideally paired with coconut chutney or sambar. For an extra touch, freshly chopped onions and coriander can be added to the batter.
